Pork Loin and “fixings” is a simple and tasty dinner that I like to make when I don’t want to think too much about the process of the dinner. I just coat the pork loins with breadcrumbs and seasonings, clean, cut and season root-vegetables. Everything goes into the oven. I think my absolute favorite thing about this recipe is that is a $5 Dinner.
“Fixings” generally refers to the side dishes- I am all about using side dishes to anchor the overall cost of a dish. Here is a list of Affordable Side Dishes.
Pork Loin and Fixings Recipe
Ingredients
- Pork Loin section ~1 lbs
- Breadcrumbs 1/4 cup
- 6 Carrot sticks
- 1 lemon squeezed for the juice, or 1 tsp of lemon juice
- 3 cloves of garlic
- 1 small onion
- salt pepper, paprika
- olive oil

Instructions
- Preheat oven to 425 degrees
- Peel carrots, then chop carrots and onion
- Place chopped vegetables in a bowl
- Drizzle with olive oil and season as desired
- Add minced garlic and lightly toss vegetables to ensure that they are covered in oil, garlic and seasoning
- Place on baking pan
- Cover the meat with the breadcrumbs- I like to place the meat into the same bowl and get the oils and seasoning on the meat and then simply dump and spread the breadcrumbs everywhere…It helps with the flavor and the mess!
- Bake at 425 degrees for approximately 30-45 min, the pork needs to temp at 165 degrees at its largest section. I like to bake for 10-15 then open the oven and flip the meat over and shuffle the vegetables and check how tender the veggies are.
