BBQ Pulled Pork Pasta is one of my better creations made from leftovers! Last Wednesday we ate Crockpot pulled pork sandwiches and by Sunday, I was turning the leftovers into something new! Before even making the pulled pork sandwiches, I had this idea to turn it into a pasta dish. I imagined some creamy combination- although that is not how this pasta quite turned out. But nonetheless, it was delicious.

The key to making excellent recreations from leftovers, is reinvigorating the flavors from the previous night. The use of garlic, onion, butter and seasoning is perfect for that. Leftovers are basically the scraps, and one of the sure ways to make a dish look full is to shred the meat. Suddenly a few chicken chunk/strips or pork strips triple. If you are left with maybe 1 serving of last night’s bell peppers (for example), add more bell peppers to the mix. Adding cheese and a carb (like pasta) is an easy way to double to the recipe and put something together fast!

BBQ Pulled Pork Pasta Recipe

Ingredients

  • Pork loin leftovers
  • 1/4 cup BBQ sauce
  • 1/4 cup Shredded Cheese
  • 1 onion
  • 1 clove garlic
  • 2 TBS butter
  • Pasta for 1-2 people
  • Salt & Pepper

Instructions

  • Saute onion and garlic with 1 TBS butter in a hot pan. 
  • When onions are translucent, add the shredded pork to the pan. You will need to shred the pork more than it was on Night 1 of your dinner
  • In a pot, cook pasta and drain when tender
  • Slowly add the pasta to the pan, and alternate with adding cheese, salt, pepper and BBQ sauce until it is as cheesy as you want, and consistently mixed.
