The Recipe of the Week: Turkey Tacos!
It’s cheap and aliterate! 😉 Bonus is when you choose Tuesday or Thursday in your meal plan. HAH! There seems to be a lightness to having turkey over beef for some recipes- for instance, turkey chili is equally delicious as a beef substitute. This week, I plan to make turkey tacos for Night 1 and the next day, we will make nachos with the leftovers. At our grocery store, ground turkey is outrageously priced- sometimes almost $5 for 1 package (which I’m pretty sure is almost 1 pound). But if you Buy in Bulk at Costco, then you can get 12 pounds of ground turkey for like $18-22. Which means, 1 dinner with ground turkey has the starting cost of $1.58. Last week at SuperOne, we got Romaine Lettuce for $2.28 and we will be using about 1/2 of that, the tomato was $0.57, the taco seasoning packet for $0.58; then there will be the cheese, onion, and garlic. In all, it’s another $5 Dinner for 2.

Ingredients

- 2 lb ground turkey- cooking entire package and storing 1/2 for Night 2
- 1/2 head of Romain lettuce
- Chopped tomatoes (for me) and salsa (for Kyler)
- Cheese
- 1-2 Cloves of Garlic
- 1 Onion
- 1 packet of taco seasoning
- 1 cup of warm water
- Sour Cream (optional)
- Mission Tortillas
Directions
- Mix 1 cup warm water with seasoning packet- set aside
- In a large, hot pan: combine chopped onion, minced garlic and turkey meat.
- Stir frequently and when turkey is almost finished cooking, add water and seasoning mix
- The pan will be very watery. Continue cooking the meat until the seasoning has been soaked up by the turkey meat
- Chop some lettuce and dice tomato
- Combine ingredients in a flour tortilla and enjoy!
We have many Calphalon dishes (I am only slightly obsessed with them). Anyways, we use our ‘giant’ one (12-inch) and it is big enough to cook all 2 pounds of the turkey meat evenly. The first time I tried cooking the turkey meat was in our 8 inch, and it wasn’t wide enough to keep space between the chunks.
