This healthy trail mix recipe is packed with healthy fats, protein and just enough carbs and fiber to shake things up! Tomorrow, I am heading to Hawaii- which for me means a 12 hour day of traveling and limited options for low carb foods. Trail Mix is a mixture of a variety of foods, often I find ones with peanuts, M & Ms, raisins, a wide variety of nuts, Chex Mix, pretzels… Those trail mix blends are delicious, but hardly reasonable for someone with my low carb diet restrictions.
We’re going to be traveling from Kalispell to Seattle, have a 3 hour layover, and make our final 6 1/2 hour flight to The Big Island! We only get snacks on the 6+ hour flight and the only option for us is a cheese and fruit platter. The Seattle airport has only a few food options + vending machines, and I doubt that there will be anything sufficient for my low-carb diet. So, I am making my very own trail mix blend that consists of healthy fats, loads of protein and the right kind of carbs and sweets!

Trail Mix Recipe
Ingredients
- 1/2 cup cashews
- 1/2 cup pecans
- 1 cup pumpkin seeds, oven roasted and salted (from the grocery store)
- 1 cup of Good & Gather Himalayan Salted Chocolate Covered Almonds (not an aff link, just so delicious!)
- 1 honey crisp apple, finely sliced
- 1 small banana, finely sliced

Directions
- Combine the chocolate, nuts and seeds in a bag and set aside
- Preheat oven to 265 degrees F
- Place a cookie rack into a baking sheet
- Spray with olive oil
- Place sliced fruit onto the cookie cooling sheet
- Bake in 45 minute increments and flip fruit every 45 minutes until crispy
- Let cool completely before combining pieces to the trail mix!
Store in a tupperware, Mason Jar or a plastic bag like I’m doing tomorrow! I’m also packing some turkey jerky and Nature Valley crunch granola bars for the trip- so that’ll be my food until we touch down or I desperately need something more.
