Chuckwagon Casserole was one of my favorite recipes as a kid. Almost any time I was asked what I wanted for dinner, Chuckwagon Casserole sprang to mind! It’s rustic, filling and just sweet enough for that spicy chili filling. Cornbread tops it, rounding out the flavor. Chuckwagon Casserole is basically just chili with cornbread baked on top- however, I could never get the image of an old pioneer wagon out of my 11-year old mind. I honestly daydreamed that this must have been eaten on the Oregon Trail…. Anyways, here is my beloved recipe.
