This fresh chicken fajita salad will have you forgetting about that tortilla or pasta recipe! Because pasta isn’t low carb whatsoever, I tried my hand last week at combining similar ingredients in a fresh salad with pan-fried chicken breasts, bell peppers and black beans. Usually when I make chicken fajitas, it includes sour cream, 1-2 tortillas and green bell peppers. Kyler wanted my pasta dish, so I had to make the two of us happy. 😉
This is the first time that I have turned this recipe into a salad recipe- although it isn’t tricky at all to amend dishes and turn them into salads. Unlike my basic chicken fajitas or pasta dish, I added black beans for added protein and corn to make it sweet- plus it means I don’t really need salad dressing. After I cooked the chicken, I took my portion out of the pot and set it aside. Then I added more of the seasoning packet-water mix and pasta to the chicken to start making Kyler’s dinner.
One of the reasons I cook with chicken is because it is so cheap! I have found with budgeting for groceries, that chicken and pork are the cheapest meats. I bought these chicken breasts from Costco in a package for about $18. It is high in protein, and is such an easy think to whip up. This chicken fajita salad is likely in the $5 Dinner Category.

Recipe for Fresh Chicken Fajita Salad
Ingredients
- 2 cups of romaine lettuce chopped
- 1/2 cup of canned corn rinsed
- 1/2 cup black beans rinsed
- 1/4 red bell pepper
- 1/4 orange bell pepper
- 1/4 yellow bell pepper
- 126 grams of fully cooked and sliced chicken
- Fajita Seasoning Packet combine with water as instructed
Instructions
- Cook your diced chicken breast with the fajita seasoning packet, as instructed on the packet
- Set cooked chicken aside, or shred it more (optional)
- Chop your vegetables and combine with corn and black beans
