This cod and edamame pasta dish is super easy and packed with protein! I make it either in the Airfryer or the pan on the stove. It also happens to be low carb. 1 cod fillet from Costco is 140 calories, with 30 grams of protein! Edamame pasta cooks quickly- almost instantly- and it is also packed with protein.


Recipe for Edamame Pasta and Cod Dinner
Ingredients
- Edamame pasta
- 3 TBS butter
- 3 cloves of garlic
- Salt and pepper to taste
- Splash of lemon juice
- 1 cod fillet
Instructions
- Carefully add a layer of butter to the cod fillet, top with minced garlic, salt and pepper, and a splash of lemon juice. I get my cod from Costco, so it’s frozen and needs to be defrosted before cooking. It easily falls apart.
- Cook fillet in Airfryers or on the pan. Airfryer for 10 minutes, but check after 5 minutes.
- Follow directions for cooking edamame pasta, strain, return to the pot and add butter, salt and pepper
