Keto Cheesy Bread (Another fathead dough recipe!) and breadcrumb crusted chicken strips was the most delicious dinner I had this weekend. One of my favorite things about the keto cheesy bread recipe, is that the dough recipe itself is versatile. Anytime you want or need to replace an Italian bread/dough (pizza crust, cheesy bread, garlic bread), make this cheesy dough and it’s the perfect substitute!
In a previous post, I used this dough recipe to make Keto Pizza- Bacon and Sausage. The recipe is technically called fathead dough– which is a pretty way of summarizing how keto it is. As you may know, the keto diet refers to low carb, and high fat and protein. This bread substitute has cheese and almonds which are both are high in fat!

Keto Cheesy Bread &
Breadcrumb Crusted Chicken Strips

Ingredients for Keto Cheesy Bread
- 3/4 cup almond flour + additional tablespoons if it is still sticky!
- 1 1/2 shredded mozzarella cheese
- 1/2 cup shredded mozzarella cheese, set aside
- 2 tbs cream cheese
- 1 egg
- 1 TBS Olive oil (optional)
- 1 TBS Each: Basil, Oregano
- Salt and pepper




Instructions for Keto Cheesy Bread
- In a kitchen mixer bowl, lightly whisk the almond flour and crack the egg into the bowl
- Add seasoning to the kitchen mixer bowl
- In a pan, slowly melt 1 1/2 shredded mozzarella cheese and and 2 TBS cream cheese until the cheeses form a smooth ball
- Drop the cheese ball into the kitchen mixer bowl and use the paddle to mix the dough together
- Use a sturdy spatula to scrape the bowl and place dough onto a sheet of parchment paper. Use olive oil on your hands and spatula to keep the dough from pulling apart too much
- Use a second sheet of parchment paper and lay it on top of the dough. Use a rolling pin or your hand to roll out a small loaf for bread.
- The dough doesn’t need to be thin like pizza crust, make it as thick as you would prefer your bread to be.
- Top it with remaining 1/2 cup of mozzarella cheese
- Bake at 425 degrees for 10 minutes.
- Remove from oven and set aside to cool.

Notes-

Breadcrumb Crusted Chicken Strips
Ingredients
- 1 chicken breast
- 1/4 cup of Italian seasoned breadcrumbs
- 1-2 TBS olive oil
Instructions
- Heat a medium pan, add olive oil and warm oil
- Cut your chicken breast(s) into even strips
- Lightly coat in the breadcrumbs
- Place in pan and cover pan with a lid
- Cook on Medium-High. Flip after 5 minutes to brown the second side of the chicken strips
- Cook for an additional 10 minutes or until cooked thoroughly
- Enjoy with Keto Cheesy Bread and marinara sauce
