My Keto Butter Cookies are totally amazing! I decided to try something wild by combining my Peanut Butter Chocolate Fat Bombs and Nutty Oatmeal Power Balls into something else! I originally was going to use my mixed nut butter to make a new fat bomb recipe, but after I had blended some ingredients, cookies sounded way better! So I pulled out the almond flour and added more Swerve brown sugar and baked them!

Rather than use the Kirkland Nut Butter, I decided to use my Nuttzo Keto nut butter because it contains almonds, Brazil Nuts, coconut, pecans, Macadamia nuts, flax seeds, chia seeds and Celtic sea salt. 😋 2 TBS serving has 17 grams of fat in it!

Mixed nut butters- especially organic nut butters- tend to have a need to be ‘mellowed’ out, so I knew I would need something to sweeten the mix and use a ‘base’ type ingredient, so I chose cream cheese and butter. After I had made the fat bomb mix, I thought cookies sounded better, but I couldn’t just add it to a baking sheet and bake it. That would result in ‘puddles’ in a pan. Flours are binding agents, so I decided to use almond flour to keep the nut flavor consistent throughout the cookie. I hope you find this as tasty as I did!

Keto Butter Cookies Recipe

Ingredients

  • 1/4 cup cream cheese
  • 1 cup of Nuttzo Keto nut butter – I use this from Thrive Market: Keto Nut and Seed Butter
  • 1 TBS butter
  • 1/2 TBS cocoa powder
  • 2 TBS Swerve brown sugar
  • 3 TBS of almond flour

Instructions

  • Combine cream cheese, Nuttzo Keto nut butter and butter in a microwave safe bowl. Microwave to soften and melt.
  • Transfer ingredients to an electric mixer and add the dry ingredients
  • Use the paddle attachment and use on 2 or 4 until well mixed
  • Use a flexible spatula to scrape the sides of the bowl and create a pile of the batter
  • Use a small spoon and your hands to scoop the batter and roll the cookies into shape
  • Bake at 350 degrees for 20 minutes on a silicon baking mat OR wax paper. (See notes)
  • Allow to completely cool before enjoying!

Notes about Keto Butter Cookies

  • Almond flour tends to be sticky- whenever you cook with almond flour, be sure to use a silicone mat or wax paper to keep whatever you’re cooking from sticking to your metal baking sheet
  • Almond flour is strangely soft and the cookies are not totally set when you take them out of the oven. Almond flour needs to be completely cooled, otherwise your baked goods will fall apart.
