This Turkey and Whole Grain Bowl is an interesting, cheap dinner made from leftovers and a bag of mixed whole grains. It is almost like a hodgepodge of a dish…There isn’t anything particularly special about this meal- only that it is mostly made from leftovers and I made this with nutrients and protein as a priority.

This dinner was born out of leftover ground turkey meat from Turkey Tacos and a curiosity for the Whole Grain Blend packet from Target.

Turkey and Whole Grain Bowl

Ingredients

  • 1 red bell pepper
  • 1 lbs Ground turkey
  • Salt and pepper and Taco seasoning packet 
  • Mexican Blend Cheese (sprinkled)
  • Whole Grain Blend
  • Small amount of tomatoes from can of petite diced tomatoes (store rest in fridge)

Instructions

  1. Microwave Whole Grain Blend 90 seconds
  2. Cooked ground turkey meat
  3. Combine 1 cup of water with Taco Seasoning packet, mix well and then add to the pan with ground turkey meat
  4. Dice/Chop fresh red bell pepper
  5. Combine all ingredients in a bowl and top with cheese
