Finding a low carb alternative to mashed potatoes was my greatest challenge when I set out to daydreaming about making my very own Shepard’s Pie/Cottage Pie recipe- a beautiful blend of ground meat, vegetables, tomato flavor, and topped with mashed potatoes. But… a potato is not low carb or Keto-friendly.
After my introduction to the parsnip, from the Hearty Beef and Vegetable Stew recipe inspired by a cookbook with 1,000 fast, Keto recipes, it got me thinking about the power of the parsnip. The parsnip is kinda like a carrot but with a built-in seasoning packet. To replace the mashed potato of any dish, you could easily trade the russet potato for the parsnip and cauliflower. As I have said in some of my other cauliflower recipe posts, this root vegetable is an interesting and worthwhile replacement for certain carb-oriented dishes. The oddest thing is that there is almost nothing to the cauliflower (hardly any calories, no carbs, no fat, and 2 g of protein per serving)… and it kinda tastes like emptiness. Rather than complain about the absence of flavor from the cauliflower, take it as an opportunity to be creative and expand your sense of flavor when making low carb dishes!
Such opportunities include stir fry, pizza crusts, and low carb vegetable mash!

Low Carb Vegetable Mash Recipe

Ingredients
- 1 Parsnip, diced
- 4 cups Cauliflower, cut into florets
- Salt
- Pepper
- 4 tbs butter
- 5 cups of water
- 3/4 cup milk

Instructions
- Combine 5 cups of water with diced parsnip and cauliflower florets. Boil until parsnip and cauliflower are soft enough to be mashed.
- Drain pot and set aside
- Melt 2 tbs butter in pot
- Add parsnip and cauliflower and mash with a potato masher
- Slowly add milk and more butter
- Finish with using an immersion blender to create the same whipped fluffiness of mashed potatoes
- Add salt and pepper for seasoning
