My Butternut Squash Soup recipe is originally inspired by a Keto recipe in the cookbook of 1,000 recipes by Lillian Cook. I have learned so much from this cookbook, mainly the essential ingredients to making Keto recipes. However, I made such significant changes to the recipe that it became an original Tiny Twenty-Something Recipe.

For $10, it is a worthwhile purchase because it gives you a foundation for Keto cooking, a meal plan and if you’re not interested in all the recipes, you can at least use them for inspiration. So you can have inspiration for 1,000+ recipes.

Butternut Squash Soup Recipe

Autumn Squash Soup

Ingredients

  • 1 Spanish Onion (that just means a small yellow onion), diced
  • 1/2 lbs of butternut squash, diced (8 oz, see visual example below)
  • 1 celery stock, chopped
  • 4 cups of baby spinach
  • 4 tbsp of sour cream, optional
  • 2 tbsp olive oil
  • 3 cups of water or vegetable broth
  • Salt and pepper to flavor

Instructions

  • Heat 2 tbsp of olive oil in a stock pot on medium-high, it can be a tall or moderately short one (see photo below)
  • Sauté onion until translucent, add a mild amount of salt and pepper
  • Combine the butternut squash, celery, 3 cups of water or broth, and reduce stove to medium-low. Cook for 25-30 minutes- turn off the heat. For a richer flavor, add chicken stock. I recommend my Homemade Chicken Broth recipe.
  • Pack the baby spinach leaves in a 1 dry measuring cup, then use a spatula to fold the leaves into the stew. Lower the heat on the stove top and cook until the leaves have wilted.
  • Use an immersion blender to puree ingredients

Notes About Autumn Butternut Squash Soup

Like I said earlier, there were several changes I made towards. My asterisks mean that I added to the list, or modified it to make a little more sense based on how the recipe developed while I was cooking it. One of the things I have noticed about this recipe book is that the recipe doesn’t season a lot. I think that might be because there are ‘hidden carbs’ I some seasoning because of preservatives maybe. I don’t think you should underestimate the power of salt, pepper, onion and an oil like olive oil or butter.

This Autumn Butternut Squash Stew is originally inspired by Recipe #438 in The Complete Keto Diet Cookbook For Beginners: 1000 Quick & Easy Recipes For Busy People On The Ketogenic Diet With 21-Day Meal Plan by Lillian Cook. I received this cookbook in a collaboration with Cooking Hacks Daily on Instagram.

The Complete Keto Diet Cookbook For Beginners: 1000 Quick & Easy Recipes For Busy People On The Ketogenic Diet With 21-Day Meal Plan by Lillian Cook is quite interesting in that there really are 1,000 recipes, a 21-day Meal Plan and the recipes are all very quick. Autumn Butternut Squash Stew should only take about 35 minutes.

The most interesting feature is that these recipes are quickly condensed in the pages of the cookbook. There are typically 6 recipes on each page. There is no wasted space, no images of the recipes, and there are quick nutrition facts regarding macronutrients and calorie in-take per serving. There are 10 grams of carbs per serving in each recipe, or fewer.

The 21-Day Meal Plan is laid out as a guideline and rather than list the page numbers associated with the recipes listed in the meal plan, the recipes are given their numbers for you to look up later. I have spent time sifting through the recipes and I am optimistic about my future experience with this cookbook.
