Parsnip recipes have so much power in the Keto diet! This root vegetable is like the carrot’s cousin- only difference is that it tastes like it has a pre-made seasoning packet in it.

The Keto Diet

I have learned a lot from a Keto cookbook called The Complete Keto Diet Cookbook For Beginners: 1000 Quick & Easy Recipes For Busy People On The Ketogenic Diet With 21-Day Meal Plan by Lillian Cook. One of my biggest takeaways, so far, has been the importance of the parsnip in Keto recipes. While there are more carbs in 100 grams of parsnip than 100 grams of carrot, I think it evens out in the long run because it replaces almost all seasoning in recipes. It is also quite a deal more filling. Despite the lightness to ever dish I have made with parsnip, I am continuously surprised by how filling it still is.

Violet thought the parsnip was her favorite veggie: the carrot
