Sweet potatoes are an approved Keto grocery list item. Better yet, potatoes are a cheap ingredient! Miss Violet and I love eating sweet potato, in fact, it is our favorite snack option! Here are 2 of my favorite ways of eating this simple root vegetable.
Sweet Potato French Fries
Ingredients
- 1 sweet potato
- 2 tbsp olive oil
- 1/2 tbsp smoked paprika
- Kosher Salt
- Pepper
Instructions
- Slice the potato into even and long french fry slices
- Combine olive oil and potato slices in a medium sized bowl
- Pour seasoning all over the slices
- Use a spatula or toss the potatoes around to make sure the slices are being covered well enough
- Back at 425 for 25-30 minutes, flip half way through and make sure they aren’t burning
- Enjoy with CREAM CHEESE for dip.
Loaded Sweet Potato
PS- this is a microwave recipe!
Ingredients
- 1 sweet potato
- 2-3 slices of bacon
- 2 tbsp of butter
- 2 tbsp of cheddar cheese, or Colby Jack cheese blend
- 4 cups of water
- Sour cream optional
Instructions
- Pour 4 cups of water into a large, glass measuring cup
- Microwave for 10 minutes, flip the potato half way through to ensure that both sides are cooked
- Once potato is soft, carefully remove from glass cup and set aside
- Cook bacon in a pan
- Carefully slice open the potato and pour the bacon grease into the potato and mix 1-2 tbsp butter
- Add diced bacon, shredded cheese and sour cream
