Sometimes before I make a soup, I like to do what I refer to as “layering” ingredients. It’s my way of adding nutrition to a recipe that doesn’t come from a can or box. One of the ways I do that is by cooking a whole chicken in the crockpot and making bone broth. When you review the ingredients lists from the cookbook, be sure to trust the ingredients lists. I was skeptical about the flavoring when the squash soup didn’t include anything like salt and pepper or even broth of any kind, but somehow this vegetable soup was amazing and packed with flavor. Also, don’t underestimate the power of the parsnip!
