Crockpot Chicken Soup is my husband’s absolute favorite recipe of mine. And in the winter, it literally has to be in the mix at least once a week…he loves it that much! I find that soup is one of the best ways to save money via the ingredients and that it makes many leftovers. In the winter, it might be easier to stick to a tight grocery budget. My chicken soup perhaps costs $2/serving (and Kyler’s helpings are huge!)

Crockpot Chicken Soup Recipe

One of the reasons I cook the chicken soup in the crock pot is because in the winter, a crockpot can seriously warm up a room. In the summer, its effects are a little less- but certainly better than using a stovetop or oven to make your dinner.

Ingredients

  • 4 cups Chicken broth
  • 1 beef bone, or homemade beef bone broth- Recipe Here
  • 3 cups water- set some water aside to monitor flavor throughout the day
  • 4 sticks of Carrots less
  • 3-4 Celery sticks
  • Shredded Chicken
  • Seasoning: Bay leaves Italian Seasoning, Salt, Pepper- you might need to add salt and pepper throughout the day
  • Garlic less than $0.50 1 bulb is $0.48 at my local grocery store
  • ½ bag of Pasta
  • Fresh bread rolls see my fresh French bread recipe

Instructions

  • Chop vegetables, and mince garlic
  • Combine vegetables, beef bone, chicken broth and seasoning into crockpot
  • Cook on HIGH for 4-5 hours- monitor and stir occasionally
  • Cook pasta 30 minutes prior to eating- We like to boil pasta in a separate pot and store them separately because it keeps the noodles from over absorbing the broth of the soup

Notes for Chicken Soup in the Crockpot

  1. When you eat leftovers, there will be a fatty layer in the container because of the beef bone marrow and it will go away once you reheat the soup. This soup makes delicious leftovers!
  2. If you need to make it low carb- swap noodles for quinoa with this Chicken Quinoa Soup
